Dooku changed because he was sick of corruption and Jinn's death pushed him over the edge. Obi-wan was nothing like Dooku. Kenobi unlike the Count truly believed in the Jedi code and the only time that he truly broke it was when he had a relationship with Sir Tachi and the Countess Satine. Which of course he ended both of them before they went to far.
